Salmon BLT With Cornmeal Onion Rings

I love seafood. I could legit live off seafood..... well actually, throw in some turf beef  and maybe that’ll be a reality. I love my cow, but we’ll get into that later. Anyway, yea…seafood is my boo. I also love sandwiches. Big and small, wide and tall, I love’em all. Almost anything between two slices of bread is probably gonna put you two steps closer to God, but this sandwich might get you there a little faster. I cried a salty tear of bliss as I ate this sandwich in the fetal position of my living room. Don’t judge me. This delicious sandwich starts with a slice of toasted perfection, basted with a garlic infused herb oil, then followed by a thin layer of spicy lemon-caper mayo, arugula, bacon, juicy tender salmon, sweet roma tomato slices, crispy onion rings, another thin layer of spicy lemon-caper mayo, and the final slice of toasted bliss. Add that all up and you have sex on a plate. But the only protection you’ll need is a bib. If you’re absolutely not about that sal...

Cinnamon Swirl Biscuit W/ a Buttery Maple Glaze..... and Bacon!

I love biscuits, and I love cinnamon rolls. So I decided to combine the two. This method is a whole helluva lot faster, and I’m a glutton for deliciousness! These are insane. I’m not even kidding. One bite, and everything wrong in your world will just suddenly be right. You won’t even care that your boyfriend forgot your name, or that your wife accidentally spilled nail polish remove all over your brand new iPad. Well…that might be a stretch, but you’ll at least forgive her a little faster if she makes these for you  I wish I could describe how delicious these were, but you’ll just have to make them for yourselves and see what the fuss is all about. The biscuits themselves are super tender, soft, buttery and delicious. Then there’s the maple glaze that compliments it perfectly, topped off with crunchy, tiny little pieces of salty smokey bacon. Man, listen…if you make these for someone special, they’ll never leave your life. I created this recipe not really knowing how it’d t...

FRIED CHICKEN & WAFFLES WITH BOURBON SYRUP

To hell with Roscoe… Who doesn’t love fried chicken? Who doesn’t love a big buttery waffle? Throw them together and you’ve got something rather special that only fans of the salty/sweet can truly appreciate. If you think you’re afraid of chicken and waffles together, think of the  peanut butter  and jelly sandwich. It’s truly the same principle   I encourage you to try it at least once in your life before you write it off. For the fried chicken, I knew I wanted juicy pieces with a crispy coating. I had nothing but time, so the night before frying I soaked a couple of fat chicken wings in a buttermilk brine. Most people use just plain ol’ buttermilk alone, but I like to add a bit of seasoned salt to it so that the actual chicken meat itself is juicy  and  flavorful. The buttermilk is acidic, so it penetrates the chicken and tenderizes it. But if you add salt to this, it then flavors it by further breaking down it’s molecular structure of the chicken....

Cheddar Bay Biscuits (Red Lobster Style)

These are so good, you’ll slap your mother and ask yourself why in the hell you wasted so much time at Red Lobster when you could have been making these delicious cheesy morsels at home! I am so serious. That is not a joke. Anyway, just about everyone I know who isn’t a Red Lobster’Nazi is obsessed with their delicious Cheddar Bay Biscuits. People order extras just to bring them home and savor the flavor a day later. I’m know I’m guilty of that right there… I mean, they’re the kinda biscuit that after sitting down at your table at Red Lobster, you get a little perturbed if your waiter hasn’t stopped by to take your drink order because that’s usually when they bring the biscuits….with your drinks. Unless you get one of those “in the know” waiters who bring those babies immediately. But you’re usually just sittin there, toe tappin’, thumb-twiddling, gazing across the room looking for your waiter with your basket of Cheddar Bay biscuits wrapped so adorably in their white napkin to pr...
