Pineapple Salsa

Yea…I do realize that it’s no longer summer, but when I have a craving for something…then I have to have it. I wanted a fresh, cool, sweet yet spicy burst of summer despite it being “ugg season”… This is delicious. It’s a very basic fruit salsa recipe that you can alter to make your own. You can add additional fruits if you want, different peppers, beans — anything you want. Make sure you use a red onion though, don’t use any other kind because it won’t taste right. Fruit salsas are excellent over savory meats such as chicken or steak, but they’re even better on seafood. This baby here provides you with freshness, brightness, sweetness and heat. I used 2 very tiny Serrano peppers for this recipe, and I left some of the seeds from one in and removed the rest. I wanted a balanced heat, one that would compliment the natural sweetness of the fruit. I didn’t see any whole pineapple’s at Whole Foods today, but they did have these cup size “to go” packets of fresh pineapple an...

THE BEST TURKEY BURGER YOU'LL EVER HAVE!!

Ground turkey is usually lean, meaning a lot of the fat is removed from it and if not cooked correctly, you can end up with a burger dryer then Eddie Murphy jokes in Planet Nash. The ground turkey I used was Perdue (93% lean 7% fat) and it still came out stupid juicy. Full of flavor, tender, just….a mouthful of perfection, especially coupled with the other very yummy ingredients. You’ll be pleased with this burger, and it’s a rather basic recipe that you can definitely tweak to your liking, and add your own favorite seasonings and toppings. Think of this recipe as your “starting point”, really do it big and make it your own. I’ve always liked adding a little heavy cream to burgers and meatloaves because it really tenderizes the meat and makes it rich. It’s basically pure fat so, that’s probably why haha! You don’t have to add it in if you don’t have it, but I encourage you to try it one day. It really does something special to it. I topped this burger with th...

Salmon BLT With Cornmeal Onion Rings

I love seafood. I could legit live off seafood..... well actually, throw in some turf beef  and maybe that’ll be a reality. I love my cow, but we’ll get into that later. Anyway, yea…seafood is my boo. I also love sandwiches. Big and small, wide and tall, I love’em all. Almost anything between two slices of bread is probably gonna put you two steps closer to God, but this sandwich might get you there a little faster. I cried a salty tear of bliss as I ate this sandwich in the fetal position of my living room. Don’t judge me. This delicious sandwich starts with a slice of toasted perfection, basted with a garlic infused herb oil, then followed by a thin layer of spicy lemon-caper mayo, arugula, bacon, juicy tender salmon, sweet roma tomato slices, crispy onion rings, another thin layer of spicy lemon-caper mayo, and the final slice of toasted bliss. Add that all up and you have sex on a plate. But the only protection you’ll need is a bib. If you’re absolutely not about that sal...

Cinnamon Swirl Biscuit W/ a Buttery Maple Glaze..... and Bacon!

I love biscuits, and I love cinnamon rolls. So I decided to combine the two. This method is a whole helluva lot faster, and I’m a glutton for deliciousness! These are insane. I’m not even kidding. One bite, and everything wrong in your world will just suddenly be right. You won’t even care that your boyfriend forgot your name, or that your wife accidentally spilled nail polish remove all over your brand new iPad. Well…that might be a stretch, but you’ll at least forgive her a little faster if she makes these for you  I wish I could describe how delicious these were, but you’ll just have to make them for yourselves and see what the fuss is all about. The biscuits themselves are super tender, soft, buttery and delicious. Then there’s the maple glaze that compliments it perfectly, topped off with crunchy, tiny little pieces of salty smokey bacon. Man, listen…if you make these for someone special, they’ll never leave your life. I created this recipe not really knowing how it’d t...

FRIED CHICKEN & WAFFLES WITH BOURBON SYRUP

To hell with Roscoe… Who doesn’t love fried chicken? Who doesn’t love a big buttery waffle? Throw them together and you’ve got something rather special that only fans of the salty/sweet can truly appreciate. If you think you’re afraid of chicken and waffles together, think of the  peanut butter  and jelly sandwich. It’s truly the same principle   I encourage you to try it at least once in your life before you write it off. For the fried chicken, I knew I wanted juicy pieces with a crispy coating. I had nothing but time, so the night before frying I soaked a couple of fat chicken wings in a buttermilk brine. Most people use just plain ol’ buttermilk alone, but I like to add a bit of seasoned salt to it so that the actual chicken meat itself is juicy  and  flavorful. The buttermilk is acidic, so it penetrates the chicken and tenderizes it. But if you add salt to this, it then flavors it by further breaking down it’s molecular structure of the chicken....
